Chef Robin Dasgupta, the head chef at Zyqa, the modern Indian restaurant curated a typical Rajasthani menu adding in rich flavors and colors and also preparing them most authentically.

Here are some of the items served at the great Rajasthani food festival

  1. Dal Bati Churma:

This is one of the most stable and well-known diets of Rajasthani culture. Just as the name suggests, this traditional Rajasthani dish consists of Dal (lentil dish often made with a mix of lentils like moong dal, toor dal, and urad dal, spiced with ingredients ), Bati (hard wheat rolls that are baked or roasted until golden brown) and Churma (a sweet dish made from crushed bati mixed with jaggery or sugar, ghee, and sometimes nuts or dried fruits). It is served on a large platter, with the dal in a bowl, bati arranged alongside, and churma in a separate dish.

  1. Gatte ki sabji:

This comes next on the Rajasthani menu. These are gram flour Dumplings served in simmered spicy yogurt curd. The gatte or dumplings are made with gram flour (besan), spices, salt, and oil/ghee. The curry requires yogurt, onions, tomato, spices like ginger garlic paste, salt, and some fresh coriander for garnishing. This dish is among the most desired staple foods found in Rajasthani homes.

  1. Bajre ki Khichdi:

This is also among the most wholesome and nutritious foods served at modern restaurants. It is made from Bajra, a pearl millet quite popular in Rajasthan. Apart from being used in this delicious cuisine,  Bajra is also used to offer a comforting texture and health benefits, for all age groups.

  1. Lal maas:

If you are a true Rajasthani, Lal Maas ought to be on your favorite list.  At Aauris,  the chefs have done an incredible job of bringing out the true taste and rich flavor of this authentic dish.

The name comes from the use of a large amount of red chili peppers adding to the color and flavor of the dish. The preparation is done using Martin onions, ginger garlic paste and other spices. Cooking them in a low flame brings out its true color and flavor.

If you are a Rajasthani at heart, this is your cue to visiting this modern Indian restaurant and grabbing a taste of these amazing delicacies till they last.
